BAKED SALMON WITH PARMESAN CHEESE


Serves 2

1 Salmon fillet about ½ kg
2 tbsp mayonnaise
1 tbsp grated Parmesan cheese
1 onion, thinly sliced

2 tsp chopped garlic
¼ cup chopped parsley
½ tbsp chopped thyme
Sea salt and pepper to taste

Pre-heat your oven to 350°F and line a baking tray with parchment paper.
Mix together the mayo, cheese and chopped herbs in a small bowl to form a paste.
Season the salmon fillet with sea salt and pepper, then spread the cheese and herb mixture evenly over the salmon fillet.
Bake in the oven until the crust is golden and the salmon cooked, about 20-25 minutes, depending on how thick your salmon fillet is.
Serve
